Easy Peasy Almond Butter Overnight Oats
Oats have to be one of the best way to start the day, yet so often, people complain it's an effort to get up an extra five minutes early to stir some milk, oats and other toppings together in a saucepan for their daily porridge. Enter overnight oats. I'll confess, this was the first time I'd ever made overnight oats. After seeing many a beautiful Instagram image each morning from the several hundreds of accounts I follow of a variety of overnight oats 'recipes' in mason jars and jam jars, I decided to just trial things out and make my own variation. I opted for almond butter and raspberries, with a pinch of cinnamon in the oats mixture and it came out perfectly. I'll admit, cold oats may take a little getting used to and I may need to rethink the size of my jar...
The best thing about overnight oats is that you can make your breakfast the night before, and still have your beauty sleep (or extra five minutes) until your alarm has gone of for the umpteenth time. If you're really in a rush, pop the oats in a portable jar and take them with you on your morning commute. Be versatile and add whatever toppings you desire.
1/2 Cup of Jumbo Oats
1/2 Cup of milk (dairy or nut milk)
1/2 Cup of water
1tsp Cinnamon (optional)
Pinch of salt
1. In a cereal bowl, mix your oats, milk, water, cinnamon and salt together. Cover with cling film and store in the fridge overnight.
2. In the morning, take out your oat mixture and start layering in a jar - 1 dollop of oats, 1 dollop of almond butter, a handful of raspberries and repeat. Keep going until you've run out of your oat mixture.
3. Pop a lid on if you're running out of the door and take with you, or dig in with a spoon and catch up on the news and your favourite blogs.
